Taught to cook by his Sicilian grandmother and later by Mexican and Navajo immigrants at Albuquerque’s iconic Cafe del Sol, Jack brought a unique blend of flavors to Atlanta—something that no one else was doing at the time. Today, two generations of Sobels, including Jack and Kim’s son Jacob, continue to craft memorable dishes that celebrate both tradition and innovation. From our Hatch Green Chile shipped in weekly from New Mexico to our commitment to using only the freshest ingredients, Agave is a place where quality and passion meet. FROM ALBUQUERQUE TO CABBAGETOWN—A FLAVORFUL LEGACY
Since opening our doors in October 2000, Agave Restaurant has been the realization of a vision: to bring the bold, vibrant flavors of New Mexico to Atlanta. Founder Jack Sobel, a native of Albuquerque, was raised in a kitchen where food was a way of life. His earliest cooking lessons came from his Sicilian grandmother, whose Italian heritage instilled in him a deep respect for fresh ingredients and time-honored cooking methods. But it was Jack’s time working alongside Mexican and Navajo immigrants at Cafe del Sol in Albuquerque that truly shaped his culinary approach, blending the rich traditions of New Mexico with a family-style passion for cooking.
When Jack moved to Atlanta, he noticed that the city lacked the unique flavors he grew up with—the smoky, earthy richness of Hatch Green Chile, the bold spices of New Mexico, and the comforting warmth of Southwestern dishes. So, in 2000, he opened Agave, bringing the flavors of his heritage blended with fresh, seasonal ingredients—right to the heart of the city.

We also maintain a commitment to receiving daily deliveries of fresh produce, buying in small quantities to guarantee quality and freshness.
